• 2 tablespoons fresh rosemary, finely chopped
• 2 tablespoons fresh thyme, finely chopped
• Zest of 1 lemon
• 2 teaspoons sea salt
• 1½ teaspoons freshly ground black pepper
• 1 teaspoon crushed red pepper flakes (optional)
• ½ cup halal-friendly stock

Preparation
Step 1: Infuse the Lamb
Pat the lamb dry.
Using a small knife, make deep slits throughout the leg.
Insert slivers of garlic into each slit to infuse flavor from within.
