Ingredients
Divine Beef & Base
• 3 lb Divine Foods USA beef shank (nihari cut, bone-in preferred)
• 10 cups water or Divine beef bone broth
• 2 large onions, thinly sliced
• ½ cup neutral oil or ghee
• 2 tablespoons ginger paste
• 2 tablespoons garlic paste
Nihari Masala (Homemade Preferred)
• 2 tablespoons coriander powder
• 2 teaspoons cumin powder
• 2 teaspoons Kashmiri chili powder (for color and mild heat)
• 1 teaspoon turmeric
• 1 teaspoon black pepper
• 1 teaspoon garam masala
• ½ teaspoon ground cloves
• ½ teaspoon ground nutmeg
• ½ teaspoon ground mace (javitri)
• Salt to taste
Thickening Slurry
• ¼ cup whole wheat flour (atta)
• ½ cup water
Cooking Instructions
Step 1: Brown the Onions
Heat oil or ghee in a heavy pot over medium-low heat.
Add sliced onions and cook slowly until deep golden brown.
This step builds the foundation of flavor.
Step 2: Build the Masala Base
Add ginger and garlic paste. Sauté until fragrant.
Stir in all spices and cook for about 1 minute until aromatic.
Step 3: Add the Divine Beef
Add the beef shank to the pot.
Sear over medium heat until lightly browned and fully coated in the masala.
Step 4: Slow Simmer
Pour in water or broth and bring to a boil.
Reduce heat to low, cover, and simmer for 2.5 to 3 hours.
Cook until the meat is fork-tender and begins to pull from the bone.
Step 5: Thicken
Whisk flour and water into a smooth slurry.
Slowly pour into the pot while stirring continuously.
Simmer uncovered for 20 to 30 minutes until the gravy becomes thick, glossy, and rich.
Step 6: Finish — Divine Style
Drizzle 1 to 2 tablespoons of ghee over the top for a traditional finishing touch.
Adjust salt and spice levels to taste.
