• 1 small onion, sliced
• 2 cloves garlic
• 1 teaspoon fresh ginger
• 1 teaspoon thyme
• 1 teaspoon curry powder
• Salt to taste
Jollof Stew Base
• 6 ripe tomatoes
• 2 red bell peppers
• 1 Scotch bonnet (adjust to taste)
• 1 large onion
• 3 tablespoons tomato paste
• ¼ cup vegetable oil
Rice & Seasoning
• 3 cups long-grain parboiled rice
• 2 to 3 cups reserved Divine goat stock
• 1 teaspoon thyme
• 1 teaspoon curry powder
• 1 teaspoon smoked paprika
• 2 bay leaves
• Salt to taste
Cooking Instructions
Step 1: Cook the Divine Goat
Season the goat with onion, garlic, ginger, thyme, curry powder, and salt.
Cook until tender, approximately 45 to 60 minutes.
Reserve the rich goat stock — this is essential for depth of flavor.
Step 2: Prepare the Jollof Base
Blend tomatoes, red bell peppers, Scotch bonnet, and onion until smooth.
In a large pot, heat oil and fry tomato paste until it darkens to a deep red.
Add the blended mixture and cook uncovered until thickened and the oil begins to separate.
Step 3: Build the Jollof
Add thyme, curry powder, smoked paprika, bay leaves, and salt.
Pour in the reserved Divine goat stock and stir well.
Add washed rice, mix gently, and cover tightly.
Cook on low heat until the rice absorbs the liquid and becomes tender.
